Haddock is my favorite of the white fish. It's sweet and flaky but consistent enough to put in a chowder. An easy preparation: bake with wine, a few tomatoes, green pepper slices for color, and add a little heat with red pepper flakes if you like. Bake 350* for 20-25 minutes. It's hard to mess up.
